Safer Food Systems Start With Evidence That Travels

The boardroom case for safer food data

On 7 June 2026, WHO and FAO marked World Food Safety Day under the theme “From burden to solutions, safe food everywhere” [1]. The observance was proclaimed by the UN General Assembly in 2018 and first held in 2019 [2]. Its message now lands in a sharper business context. WHO’s 2026 estimates put the global burden of unsafe food at about 866 million illnesses and 1.52 million deaths each year, with US$310 billion lost annually in productivity and medical expenses [3].

For R&D leaders, food safety is not only a compliance function. It affects investment choices, supplier qualification, product development, claims substantiation, regulatory planning, commercialization timelines, and IP protection. A safer food system is built when discovery, data curation, Data Management, Data Analytics, Artificial Intelligence, regulatory strategy, and patent intelligence move together.

From hazards to decisions

Food safety begins with known practices, but it scales through reliable systems. WHO’s Five Keys to Safer Food remain a practical baseline: keep clean, separate raw and cooked foods, cook thoroughly, keep food at safe temperatures, and use safe water and raw materials [5]. For companies, those principles translate into documented controls, validated processes, trained teams, and evidence that can survive audit, inspection, or due diligence.

The harder work sits upstream. A contamination signal is rarely useful without sampling context, batch history, supplier metadata, laboratory method details, storage conditions, and corrective action records. Food safety intelligence works like an air-traffic control system: the value is not in one radar screen, but in shared, trusted signals that help many actors avoid collision.

WHO’s Global Strategy for Food Safety 2022 to 2030 calls for forward-looking, evidence-based, people-centred, and cost-effective food safety systems [4]. That language matters for enterprise planning. It points to a shift from reactive testing toward risk-based systems that combine surveillance, food chain data, scientific evidence, and risk assessment.

Where digital systems change the risk equation

Digital traceability, predictive analytics, and AI can improve prevention only when the underlying data are fit for use. FDA’s New Era of Smarter Food Safety focuses on tech-enabled traceability, smarter tools for prevention and outbreak response, new business models, retail modernization, and food safety culture [8]. The agency has also explored AI and machine learning for import screening, including seafood imports [8].

The contrarian insight is simple: AI is not the first investment. Data discipline is. Without controlled vocabularies, harmonized identifiers, validated laboratory fields, and curated records, analytics can create speed without confidence. The next advantage in food safety will often come from better Data Management before better models.

Case module: genome data with traceability

A verified example is the EFSA and ECDC One Health whole genome sequencing system. EFSA states that whole genome sequencing helps detect and prevent foodborne outbreaks, supports real-time multi-country investigations, and is used with traceability and epidemiological evidence to identify outbreak sources [7]. This is a practical model for R&D and quality teams: molecular data become more useful when linked to product movement, sampling history, and exposure information.

For businesses, the lesson is not that every company must run genome surveillance. The lesson is that food safety records should be structured for connection. When test results, lot codes, suppliers, and process data can be connected quickly, response becomes more precise.

Innovation, regulation, and IP need the same evidence base

Food innovation is moving quickly in diagnostics, fermentation, packaging, preservation, ingredients, alternative proteins, sensors, and digital monitoring. WIPO’s 2024 Patent Landscape Report on Agrifood reviewed AgriTech and FoodTech patent activity across 23 sub-domains, including alternative nutrient sources for human food [9]. That makes patent intelligence part of food safety strategy, not a separate legal exercise.

FAO and WHO describe Codex as international standards, guidelines, and codes of practice designed to protect consumer health and promote fair food trade [6]. For commercialization teams, Codex alignment can help frame product specifications, safety controls, and market-entry discussions.

Technology Transfer teams should bring IP review earlier into R&D. A food safety innovation may involve a patentable composition, a detection method, a process parameter, a software workflow, or a trade-secret dataset. Patent drafting and filing support should therefore sit close to laboratory notebooks, validation records, and regulatory evidence. Prior art search and freedom-to-operate work are stronger when supported by curated scientific and patent data.
